Coat grill rack with nonstick cooking spray. Preheat grill to medium (300F to 350F). Lightly coat an baking dish with nonstick cooking spray. Season fillets with salt and pepper to taste and place in baking dish. Brush fillets with mustard; set aside.
In a medium bowl combine panko, almonds, parsley and lemon peel; spoon mixture on fillets, coat well.
Place baking dish on grill; grill 8 to 10 minutes or until fish flakes easily with a fork. Serve immediately.
